山地酪農とは?

日本は気候に恵まれており、たくさんの雨が降り、大地が豊かです。たくさんの山々、木、草花、海があり、山の幸、海の幸が豊富です。この豊かな自然を利用して、私たちはエコな農業を実践していくことができます。

山地酪農は、なだらかな山を利用した放牧酪農です。山には木があります、たくさんの草も生えています。木のおかげで暑い日差し、風や雨、雪をしのぐことができます。山羊たちは木の葉や木の実も大好物です。みんな思い思いに好みの場所で草を食べたり、休んだりします。草や木を食べ、糞をするとそれが大地の栄養になります。山の恵みをいただいた家畜たちの糞は、びっくりするほど早く分解し、すぐにさらっとした土のようになります。そしてまた、おいしい草が生えて家畜たちが食べてミルクを出す。山地酪農は循環型の酪農です。三良坂フロマージュでは海外の飼料に依存しないフードマイレージゼロの酪農を目指しています。

なぜ山地酪農?

祖父母が住んでいる三次市三良坂町で生まれ、大阪で育ちました。大自然がある三良坂へ遊びに来るのが大好きで、高校卒業後は広島に戻り、農業の短期大学へ入学。酪農課程を専攻したことから、将来、酪農の仕事をしたいと思うようになっていきます。卒業後はアメリカ、オーストラリアに渡り、酪農について多くを学びました。近代酪農が進んだ牧場では、何千頭もの牛がいて、搾乳量などを全てコンピューターで管理。毎朝2時に起きてお乳を搾り、餌をやり、午後から少し休憩をとり、またお乳を搾る。そんな生活を続けていくうちに、牛たちは幸せなのだろうか、自分は幸せなのだろうか、という疑問が湧いてきます。牧場でゆっくり牛たちが草を食べる、昔はあった風景が、近代化が進むうちに、なくなっていく。そのような環境で葛藤していくうちに、自分に合う酪農スタイルを模索し始めました。牛たちを幸せに飼いたいので放牧がいい、そして日本にある資源を有効に活用したいという思いから行き着いたのが山地酪農でした。

日本に帰ったら、山についてもっと知ろう、そんな思いから林業の仕事に2年間従事。土地や牛を買うにはまとまったお金が必要ですが実績がない私にはどの金融機関も貸してはくれませんでした。ではチーズづくりを始めよう、そう心に決め、フランスに渡りました。

帰国後2004年に三良坂フロマージュをオープン。その3年後、わずかながら貯めたお金で、地元の方の協力を得て山を購入することができたのです。その後は、チーズを作っては山に行き、木を伐り、草を刈り、そんな毎日でした。少しずつ人が足を踏み入れることができようになり、その傍らで、家の横で飼っていた仔山羊たちが大きくなり、山の一角を電気柵で囲み、放牧を開始。その後は山羊や牛たちの力を借りながら、トラクターで耕し、牧草の種を蒔き、チェンソーで木を伐る、山から大きな音が毎日響きます。

そして山地酪農をはじめて約10年が経過。今では放牧エリアも山全体に広がり、とっても美しい牧場に変身です!

 

多くの方の協力を得て、ここまで辿り着くことができました。私がやろうとしていることを理解し応援して下さっている皆様、本当にありがとうございます。

これからも日本の資源、地域の資源を活かしながら酪農をしていきたいと思っています。

牧場

三良坂フロマージュの牧場は、お店のそばの放牧地から始まり、奥の山へとつながっていきます。牛や山羊たちは、お店のそばまで降りてきていることもありますが、気候や天気、様々な条件により、山にいることも多くあります。お店から山を見渡すと牛や山羊が見えることもあります。みんな人懐こいので、お店のそばにいるときは、是非ともゆっくり見ていただければと思います。

Mountain Grazing in Japan

Japan is blessed with a favorable climate bringing ample rainfall to the rich fields. The mountains are blanketed with trees and grass. Cows and goats successfully brave hot sun, wind, rain, and snow thanks to the protection offered by the trees. Each animal seeks grass and leaves to munch in favored spots, resting at will. The manure produced from a diet of grass and shrubs serves as fertilizer, further enriching earth. “Mountain grazing” dairy farming is recycle-based agriculture. Mirasaka Fromage aims to pursue zero food-mileage dairy farming with no reliance on overseas fodder.

 

Why pursue “mountain grazing” dairy farming?

I was born in the Mirasaka neighborhood of Miyoshi City, Hiroshima Prefecture, where my grandparents live, and was reared in Osaka. I loved vacationing amidst the natural backdrop of Mirasaka, and returned to Hiroshima after high school to enroll in an agricultural vocational college with a major in dairy farming. After I graduated, I spent time in the USA and Australia for further study of dairy husbandry. Modern dairy farms have thousands of cows, with milk production management completely computerized. Milking begins every morning at 2am, followed by feeding. The second milking session starts after a short afternoon rest. Continuation of such a lifestyle led me to wonder whether the cows and I myself were truly happy. Just as I wrestled with these doubts, I encountered the “mountain grazing” style of dairy farming.

 

I returned to Japan and worked in forestry for two years to learn more about the mountains, after which time I travelled to France to study cheese production. In 2004, I launched Mirasaka Fromage. Three years later, I purchased hillside property and began reclamation. Every day I would make cheese, go to the hillside, cut down trees, and remove weeds. Eventually, I was able to involve the cows and goats to help clear the acreage, and now the entire hillside has been transformed into beautiful pastureland!

 

The Farm

The Mirasaka Fromage farm begins next to our store and stretches back far into the mountainside. The cows and goats do descend to the area right near the store, but weather and other conditions keep them up in the mountain most of the time. The animals are people friendly, so if they happen to be near the store, by all means enjoy observing them at your leisure.
