私たちの"思い"

牛も山羊も人間と同じように、出産をして初めてお乳を出すことができます。

山地酪農では、山の中をよく歩くため足腰が鍛えられ、ほとんどの出産が安産ですが、時に難産のときもあります。

 

出産後は、たくさんの草を食べながらお乳を出します。

三良坂フロマージュでは濃厚飼料は与えません。

濃厚飼料を与えて体に負担をかけ、お乳を一時的にたくさん搾っても家畜の寿命を縮めるだけだからです。

草のみで育てると搾乳量は本当に少ないですが、彼らの体を大切にしながら長く幸せに過ごすことができるのです。

細心の注意を払いチーズにすることが私のモットーです。

 

おいしいチーズにすることで、お客様にも無駄なく食べていただける、
そのような思いで毎日チーズ作りをしています。

三良坂フロマージュのチーズ造り

三良坂フロマージュでは、フランスとイタリアで学んだ伝統製法に
日本人独特のエッセンスを加えたチーズ造りを目指しています。

 

気候により食べる草の種類も違い、ミルクの性質も変わってきます。
脂肪分、たんぱく質の割合も違います。

春のミルクはとっても濃いクリーム色、
そして筍をたくさん食べた牛や山羊たちのミルクを仕込むと、製造室が筍の香りになります。

秋になって栗をたくさん食べると山羊のミルクはとっても濃厚になります。

チーズの味も、ミルクの香りや味によって変化します。

この季節感も是非お楽しみいただければと思います。

10年間の試行錯誤のゆえ、2013年にフランス・トゥールで行われた国際チーズコンクールにおいて、
牛の熟成チーズ『フロマージュ・ド・みらさか』はジオトリカム部門において銀賞をいただくことができました。

2015年には山羊の熟成チーズ『フロマージュ・ド・みらさか・シェーブル』が
シェーブル部門において金賞をいただくことができました。

チーズを入れる木の箱や葉っぱ、地元の果物やハーブなど、地元のものをたっぷり使ったチーズや、
和の美しさを求めたチーズ、いろいろなチーズを一つ一つ思いをこめて手づくりしています。

当店のチーズはぜひ賞味期限内にお召し上がりください。

賞味期限を過ぎると、風味や形状などが変わることがあります。

乳酸菌が生きていますので期間を置くと、フレッシュチーズも熟成チーズも発酵がすすみます。

いろいろなカビが生えることもあります。どうかご理解いただければ幸いです。

Concept

Just like humans, cows and goats gain the capability to produce milk when they give birth. The animals reared in “mountain grazing” dairy farming build strong legs in the hilly terrain, and therefore normally enjoy easy childbirth. Occasionally, though, we do deal with difficult births.

 

Ample grazing is key to generous milk production following the birthing process. At Mirasaka Fromage, we do not dispense concentrated feed. Doing so may produce larger amounts of milk within a limited time period, but it stresses the body and shortens the animal’s lifespan. Allowing the animals to graze naturally on grass greatly limits the amount of milk we can obtain, but it helps us keep our livestock healthy and upholds our desire to see them live long and happy lives.

 

Our animals work hard every day, dedicating their lives to producing milk for us. My motto is to do my best to ensure that not a drop of that precious milk is wasted in the production of our cheese. Each and every day, we make delicious cheese as a way of ensuring that our customers truly enjoy our cheese and, in turn, never let it go to waste.

 

Mirasaka Fromage puts traditional manufacturing techniques learned in France and Italy to work in our cheese production. As the type of grass consumed varies with the seasons, the milk itself varies.

 

Spring milk is a thick cream color, and when we accumulate a stock of milk produced by cows and goats which have grazed on bamboo shoots, the production area reflects that aroma. In autumn when goats graze liberally on chestnuts, their milk becomes thicker. The flavor of cheese also varies with the taste and smell of the milk used to produce it. It is our hope that customers will enjoy this seasonality through our products.

 

Following a decade of trial and error, our mature cow’s cheese (“Fromage de Mirasaka”) took the silver medal in the geotrichum cheese category at the Mondial du Fromage international cheese competition in Tours, France in 2013. In 2015, our aged goat’s cheese (“Fromage de Mirasaka Chevre”) received the gold medal in the goat’s cheese category.

 

We choose to make our products by hand, treasuring all of the ingredients involved, including the wooden boxes and leaves we use in packaging. We offer a wide variety of cheeses, featuring everything from local fruits, herbs, and other ingredients, incorporating traditional Japanese aesthetics, and ensuring gastronomic pleasure for all.

 

We encourage you to enjoy our cheeses before their shelf life is reached. Once that date passes, the flavor and shape of the product may start to deteriorate, and as the lactic acid bacilli continue to ferment, the cheese, be it fresh or aged, may start to grow mold and spoil. We greatly appreciate your understanding in this matter.
